While performance mode has some graphical effects either disabled or simplified, any differences are virtually indistinguishable during gameplay. As both modes also lock to their framerate target 99% of the time, 120fps is the right choice (unless you can't stand very slight reductions in areas like resolution, which is still 4K-like). Finally, base PS5 also has the same modes with the same framerate performance, but look slightly blurrier.
