Quality mode has a noticeably sharper image with less shimmer/breakup in hair. Performance mode can dip below 60fps, but stays well within the VRR window and only lasts a couple seconds. Base PS5 also has DRS and its internal resolution can go as low as 720p (performance) and 900p (quality), leading to far more shimmer/breakup. Real-time cutscenes are an uneven 30fps regardless of mode or hardware (even PC) and the early FMV cutscenes have visible macroblocking.
